What you'll learn

In light of current events, we may all be having much smaller Christmas gatherings. Therefore, Morgan has designed an interactive and festive class to help you throw an intimate holiday party that showcases a delicious cheese platter and wine pairing to match!

After learning how to choose the perfect wine for cold weather that best accompanies cheese, you will then be guided through a systematic tasting of three different artisan English cheeses and what makes them such good a good choice for your festive cheese board! Alongside covering history and provenance, you will deconstruct each of the cheeses, noting how they smell, taste and make you feel. This detailed breakdown, along with the history of cheese, will help explain why they pair so well with certain wines and inform your future pairings and accompaniments. All to ensure your next cheese or dinner party will blow your guests away!

You’ll be tasting three artisan English cheeses that you'll be able to find in most gourmet cheese shops: Richard III Wensleydale, Truffle Brie and Colsten Basset Stilton. These are farmhouse artisan versions of the top selling cheeses during the holiday season. They pair excellently with a red wine from Cotes Du Rhone - and the GSM Blend is king. You should be able to find a bottle in most wine shops for a reasonable price.

As well as all that, Morgan will reveal her top champagne suggestions for big celebrations and which white wines will warm you up during the coming months.

A tasting sheet template will be provided online, as well as a specialist flavour wheel, accompaniment suggestions and serving tips for a smooth enjoyable mini-party!

Morgan Rock

Morgan Rock is a professional and certified fromager, with over fourteen years in the industry working with wine and cheese. After gaining a fromager qualification from a specialist Ontario college in 2018, Morgan moved from her hometown of Toronto to London in order to expand her knowledge of cheese. Morgan has worked in boutique wine bars, Selfridges and leading artisan cheesemonger Paxton & Whitfield. Morgan also set up her own business hosting cheese and wine tastings, alongside consulting, for private parties, companies and events.

What to bring

Recommended cheeses:

  • Richard III Wensleydale
  • Truffle Brie
  • Colsten Basset Stilton

These are artisan British cheeses that you should be able to find in most gourmet cheese shops. You may bring along any other cheeses if you prefer.

Recommended wine:

  • Cotes du Rhone GSM. The following notes you can mention to your wine merchant when picking: Red fruits and spice; Hints of smoke and coco; Powerful fruit - a hint of spice and gentle tannins. Or, if preferred, another wine of your choice!

Extras:

  • Something to snack on. These nibbles will work well with the cheese and wine selection: melba toast, ginger snaps, roasted cashews, mince meat pie filling, pears.
  • Pen and paper/notebook to create a cheese journal

Technical requirements
You'll need to have access to a laptop, tablet or phone to download and use Zoom (which is what we use to stream the classes) and a good internet connection. All instructions will be provided when your class is booked. Learn more
Preparation
Have a look at what items you might need to bring along. All classes will be available to join 15 minutes before their start time so you can test your connection, audio and video, and ask any questions. Learn more
