In this series of classes teaching you how to cook Michelin style dishes, you will start with simple knife skills and then progress each week making stocks, sauces, purées, gels, foams. Once you have understood these processes, we will progress onto cooking meat and fish. This class will focus on knife skills.
I would recommend each member of my class to invest in a good knife and have a blade sharpener.
James Cochran is one of the UK's most exciting chef who is at the helm of his own restaurant 12:51 in London, a fine dining experience with a Caribbean and Scottish twist that is inspired by his heritage. 12:51 has received numerous accolades and stellar reviews, with dishes being known for their bold colours and flavours.
Before this, James spent nine years at the renowned two Michelin star restaurant The Ledbury under Brett Graham, before moving to the only Michelin-starred pub in London - The Harwood Arms. In 2018, James won BBC’s Great British Menu as ‘Champion of Champions’ on his first and only appearance.
